Old Hickory knives were first introduced in 1924 and are still made in the USA by the Ontario Knife Company, making them one of the longest-running kitchen knife lines in America. The 7504 is the 4" paring knife, a touch longer than the classic 3¼" paring model and one of the most useful blades in the set.
The blade is high-carbon steel that sharpens quickly and holds an edge better than many stainless knives. The tang runs about the full length of the handle, and the hardwood scales are secured with brass compression rivets. It is equally at home peeling and trimming in the kitchen or serving as a traditional patch knife for muzzleloader shooters.
Like all carbon steel, it will develop a natural patina with use. Hand wash, dry promptly and wipe with a little oil to keep it looking its best.
